We are updating our plant

New York, June 17th, 2008

Dear friends of siggi’s skyr,

We are dreadfully sorry to report that our yogurt is in rather short supply these days.

Having, this spring, encountered much more demand for our yogurt than we had ever anticipated our small yogurt plant said enough is enough. Our systems peaked in the heat, valves screeched and the yogurt simply didn’t come out.

We are currently working hard, night and day, on installing new equipment that will be able to better handle this growing demand. Unfortunately, since we only have one plant to work with, while we hammer away, we are not going to be culturing up a lot of milk so there will not be much of siggi’s skyr out there on the shelves for the next couple of weeks.

We feel awful about this and I sincerely apologize for any disappointment caused. Please rest assured we are doing all we can to speed up these installations.

We look forward to bringing you back all our delicious flavors but in the meantime do not hesitate to contact us with your questions or concerns (or, for that matter, any comments that might improve our morale!) at info@skyr.com

Yours sincerely,

siggi

P.S. If you want to get an update and hear when we are fully up and running again please sign up for our mailing list: we will send out a message as soon as serious incubation resumes: click here to sign up.

Dear friends just a quick update. We are almost done with our upgrade and testing and hope to start shipping yogurt very soon. In the mean time thank you all who have sent us e-mails or letters for your many kind words of support and encouragement. I would like to post one such e-mail, a poem we really liked, from Micaela Blei:

For Siggi's, As It Updates Its Manufacturing Equipment Upstate

I miss
the sweet bite of you,
the weight, a
coy spoonful
turned upside down.

I dream of wide Arctic stretches,
thoughtful flavors.
When I eat other yogurt
I feel unfaithful.

I'll wait patiently for you
to return to me,
to my kitchen,
to my spoon:

But hurry,
Because the day without you
(it was once enough-- before I knew!)
is sad and thin
and artificially colored.

We are getting closer...the final push... a fresh poem of support we liked, this one from Christine Cummings:

You are by far, the very very best,
For you have me spoiled for all of the rest,
I'll not ever stray now that I know you so well,
These weeks without you have been living hell,
Please come back real soon, I can't hardly wait,
Anticipation shakes me, do not be late.
Who knew a yogurt could thus satisfy?
I'll wait 'til you're here and never ask why.
I'm so glad I found you, don't ever go,
And to all I speak, it will be of you, you know.

We are producing a tiny bit of product now... we are still a bit slow... a better update next week, in the mean time a great support limerick from Catherine L. Garvens, Madison, Wisconsin:

A tasty delight--Siggi's skyr!
I loved you and now you're not here.
Empty shelves at the store,
please hurry make more!
My cravings are now quite severe.

while waiting for an update, another rhyme worthy of publishing, from Andrea Morgan:

I miss Siggi's
Yes I do
Days without Siggi's
Make me blue

I miss my protein
For working out
You kept me lean
I won't get stout!

I hear you're coming
to my shelves soon
When you get here
I'll sing a happy tune!

So keep on working
because you see
You're so important
to others and me!

Sorry we have been a bit quite this month. We did some shipping in early August but we need to make a few more additions to our plant before full yogurt production resumes we hope to be ready by end of next month. Many thanks again for all your e-mails of support and all the great poems you have sent us :) we have been quite miserable not being able to send you all yogurt!
